Berton Vineyard Foundstone Unoaked Chardonnay 750ml

Local vineyard blocks of Chardonnay with particular attributes and quality are selected in making this fresh, crisp and fruit driven style with a slightly earlier harvest also aiding in achieving this. Harvest occured during the night and early morning in minimising oxidation and cooling requirements whilst protecting the fruits fresh varietal characters. The fruit is crushed and chilled to our bag presses where gentle press cycles extract the Chardonnay juice. This juice is then lightly clarified and fermented in stainless steel tanks at low temperatures which assists in the production tropical fruit flavours and esters from fermentation. After completion of ferment, the wine was left on the remnant solids from the yeast for an extended period in providing a creamy mouthfeel prior to filtration and bottling.
